Something's Fishy
Growing up in Arizona, I haven't necessarily eaten a lot of fish. Mexican food all day long, but fish not so much. That being said, I do like fish. And it's more and more available in IQF (individually quick frozen) packages that are ideal for one person.
My latest fish of choice is tilapia. It's a mild white fish - despite this blog entry's title it's not fishy at all - that's fairly low in calories. It thaws quickly (though sometimes I am prepared enough to actually move it from the freezer to the fridge in the morning) and is really easy to prepare.
Basically I pat it off, sprinkle it with some kosher salt and a generous helping of Northwoods Seasoning from Penzey's and fry it up in a bit of olive oil. Add a vegetable and quick salad, and it's a great meal.
